Today I'm back with another recipe that packs a punch of flavor with added texture and a touch of sweetness. Curried rice with cranberries and pine nuts is the perfect compliment to a grilled or sauteed chicken - or you can just enjoy it on its own.
4 cups day old rice
2 1/2 tbsp olive oil
3 tbsp Ka'iulani's Exotic Curry (I use Medium heat)
Pressed Garlic (to taste)
Toasted Pine Nuts
Optional: Green Onion, sliced (garnish)
Heat olive oil to medium heat and add in curry spice, garlic and cranberries. Cook until garlic is done or for a couple of minutes. Add in rice and mix well. Adjust flavors as you deem necessary. Turn off the heat and toss in pine nuts (or use as a garnish). Easy peezy right?!
