Hey hey everyone! Happy Tuesday.
Do I have a rockin' recipe for you today.  Lately, if my flavor palate hasn't been centered around tomatoes, mozzarella, basil and balsamic - it's been on mediterranean/greek style mode.

In June, my aunty introduced me to regular Cowboy Caviar (the original mexican style).  It was glorious.  So I re-invented the wheel and came up with a greek style Cowboy Caviar.  Seriously guys - this thing is nom nom to the fullest.  It has summer written all over it!  Not only can you eat it with pita chips, you can use it as a topping/dressing over crisp lettuce; add it to some chicken in a pita or wrap - I mean the pairings are endless!!  It makes a great party appetizer for guests to dig into with some pita chips.  Pair it along side some hummus for a Mediterranean, Greek style themed dinner party.
1 Cucumber, diced
1 Tomato, diced
16-20 Kalamata Olives, sliced
1/2 red onion, diced
1 can garbanzo beans, drained
Feta cheese (as much as you want)
Cranberries (optional - I like the added sweetness)
4 cloves of minced garlic (may be a little over board for some)

Olive Oil
Red Wine Vinegar
Lemon Juice
1 spoonful of Kalamata Olive Juice

Now all you have to do is throw all those ingredients into a mixing bowl and give it a good stir.
I don't measure the liquids I add to the Cowboy Caviar.  I am a firm believer in taste.  I always taste while cooking and adjust flavors to my preference.  If you want a more definitive dressing recipe, please visit Simply Scratch and her My Grandma's Greek Dressing Recipe (it was my inspiration).
