Why weren't overnight oats around when I was a kid?? Seriously, the breakfast game has jumped leaps and bounds from when I was a child. I used to hate breakfast, and now days - I can't function without eating in the morning.
WHAT? ANOTHER BREAKFAST RECIPE?? I know, I know - a trend is happening here at 91D. Other recipes are soon to follow, but lately - I've been on a breakfast kick, can you roll with it? I hope so! I'm just loving the freshness of it all and could probably eat it for lunch and dinner too!
Its been over a year since I've seen countless overnight oat recipes, and I never tried it til now. What a mistake that was! Such an easy breakfast on the go and its packed full of whole grains, protein and a ton of nutrients you need to get a healthy start to the day. The milk and/or yogurt softens the oats perfectly and its just the perfect make a head breakfast to take with you on the go!
Almond Joy Chia Overnight Oats
1/4 c rolled oats
1/3 c milk (I use Almond Milk)
1/4 c low fat coconut greek yogurt
2 tsp Chia seeds
Chocolate nibs or morsels
Combine first four ingredients and let set overnight. Top with toppings and mix in the morning.
